Lemon Zest Salt

After you taste this lemon zest salt, you will forget grocery store lemon salt forever! With equal parts lemon zest and sea salt, this bright tasting versatile salt livens up a simple salad dressing.  Sprinkle it over goat cheese as pictured in the watercress salad shown in my grain salads post, on vegetables meat, fish…anything!  This recipe is from Patricia Wells’ Salad as a Meal: Healthy Main Dish Salads for Every Season, an excellent cookbook, especially if you love salads!

Instructions

  • 1. Mix finely grated lemon zest with salt. The original recipe suggested grinding the mixture to a fine powder. I like mine with texture and omitted this step. Your choice!
  • 2. Store covered in the refrigerator not longer than a week - after that, the flavor wanes
