Black Walnut Icebox Cookies

Black walnut icebox cookies just like grandmother used to make, only with a little less sugar.

Instructions

  • 1. Blend dry ingredients in a bowl, set aside
  • 2. In a mixing bowl or in a stand mixer, beat butter and sugars until light
  • 3. Add egg and beat until fluffy
  • 4. Mix in vanilla extract
  • 5. Add dry ingredients, mix until combined but don't overbeat
  • 6. Stir in raisins and black walnuts
  • 7. Form dough into two oblong rolls, wrap in parchment or plastic wrap and refrigerate for 2-4 hours or overnight
  • 8. Preheat oven to 350 degrees F
  • 9. Line a cookie sheet with a Silpat or parchment
  • 10. Slice cookies approximately 1/4" thick
  • 11. Bake for 12-15 minutes until cookies are light brown in color
